Call it a cake or treat it as a dessert, have it for breakfast or after dinner, my mango crumble cake will surprise you with its inimitable taste and texture! At the outset, I would like to inform you that this recipe is my own brainchild. Even though I have successfully experimented and made many desserts with mango, my experience with mango cake was never very satisfying. This could be because of the very dense consistency of the cake! To give it a makeover and to enrich the palate, I thought of adding crumbs as a topping and the result was amazing! A simple mango cake turned into a delectable one. Cooking is after all an amalgamation of imagination and application, endeavoring to always create something new to break the monotony, and transforming simple recipes to extraordinary ones!
As I have just mentioned, I never really fancied baking the simple mango cake as it always turned out to be somewhat dense! But when the idea of topping it up with crumbs hit my imagination, I couldn’t wait to give it a try and the outcome was so satisfying and fulfilling, that it was indeed worth all the efforts.
Cooking is an art, maybe the finest form of art. It is an art of adjustment of different ingredients, of colours, of temperature and everything involved in it. I understood this very well while baking this particular cake. Previously I used to add a large quantity of mango pulp thus ended up baking a dense cake. The idea is to put just the right amount of mango to make the cake lighter. Since the cake is baked along with the crumbs, it’s important to regulate the oven temperature to get the crisp crumbs and not the burnt one!

Serves: Roughly 10 pieces
For the cake:
- Mango pulp- ½ cup
- Flour- 1 cup
- Curd- ½ cup
- Milk- ¼ cup
- Oil- ¼ cup
- Sugar- ½ cup, powdered
- Baking powder- ½ tsp
- Baking soda- ½ tsp
- Vanilla essence- 1 tsp(optional)
For the crumbs:
- Flour- ½ cup
- Butter- 50 gm, cold
- Granulated sugar- ½ cup
- Brown sugar- ½ cup
Take flour and sugar in a bowl.
Cut cold butter into small pieces and add to the flour. Mix with hands.
The mixture would look like bread crumbs. Keep it aside.
Prepare a loaf tin by greasing with butter/ oil and dust with flour.
Puree mango in a blender. Strain through a sieve.
Sieve flour and baking powder together.
Put baking soda in the curd, stir and keep aside.
Beat together oil and sugar till it becomes light and pale in colour.
Add vanilla essence(optional).
Add curd and mix well.
Gradually add the flour through the cut and fold method.
Add the milk and mix it well. Add more milk if the batter is too thick.
Pour over the prepared tin.
Add the crumbs evenly on top of the batter and bake in a preheated oven at 180 degrees C for 40-45 min or till done.
It’s a simple cake, the crumbs made all the difference!
Baking time may vary from oven to oven.
At the end of the baking turn on the grill for the crumbs to become golden brown in colour.
While making the crumbs preferably use salted butter as the salty taste goes well with the crumbs.
