Corn and spinach are a great combination and top it with cheese and it’s a sure hit recipe! Corn, spinach and cheese are an ideal combination for filling as well, be it for sandwiches, quiche or wraps. Not only cheese but cottage cheese also goes very well with spinach. Indian Palak paneer is a perfect example of a spinach and cottage cheese combo. No, today I am not going to write about Palak-paneer or any Indian recipe. My today’s post is a continental dish with spinach, corn, cottage cheese combined with white sauce and cheese!

This recipe consists of several layers. In one layer there is spinach mixed with cabbage and onion, followed by a layer of cottage cheese and corn. On top of it comes a lavish spread of creamy white sauce topped with grated cheese! Sounds yummy, doesn’t it? So, let’s have a look at the recipe which is simple and nourishing as well.

INGREDIENTS:
- Spinach- 2 cups, chopped.
- Cabbage- 1 cup, chopped.
- Corn- 1/2 cup, boiled.
- Onion- 1 large, chopped.
- Garlic- 1 tbsp, finely chopped
- Cottage cheese- 200 gm
- Tomato- 2 large, one chopped and the other one sliced.
- Milk- 2 and ½ cups
- Flour- 2 tbsp
- Butter- 4 tbsp
- Black pepper- 1 tsp
- Mixed herbs- 1 tsp
- Salt – to taste
- Grated cheese, mozzarella or cheddar- ½ cup

METHOD-
Boil 500 ml water with 1 tsp sugar and ¼ tsp salt. Add the spinach and cabbage and when it starts coming to a boil put off the gas.
Remove spinach and cabbage from the water and rinse them in cold water a few times.
In a non-stick pan, add 2 tbsp of butter and put chopped garlic in it and sauté for few seconds.
Add chopped onion and fry till translucent.
Add chopped tomato and cook till tomato becomes mushy.
Add the blanched spinach- cabbage mixture and cook till water evaporated and the mixture becomes dry.
Put some salt and sprinkle pepper.
The mixture is ready to be used.
Take a square or rectangular dish and put a layer of the mixture at the bottom of the dish.
Top it with a layer of boiled corns.
Now put a layer of crumbled cottage cheese on top of it.
Again, put some corn over it.
Sprinkle salt and pepper.
Prepare the white sauce by frying 2 tbsp of flour in 2 tbsp of butter. Add milk and stir continuously to avoid any lump. Add a little salt.
Pour the sauce on the cottage cheese and corn layer.
Put a lavish layer of grated cheese.
Top it with sliced tomatoes and sprinkle some red chilli flakes.
Bake in a preheated oven at 180 degrees C for about 20 min or till the top becomes brown.
Serve hot with bread or dinner rolls.

AUTHOR’S NOTE-
To add some more greens and to make it healthier and more nutritious, I have added cabbage with spinach though you can avoid cabbage and make it with spinach only.
Onions can be safely fried in refined or olive oil. But I will always opt for butter to enhance the taste. Sometimes, I use refined oil and butter in 1:1 proportion.
Do not boil the spinach, or it will lose its food value.
While frying spinach with onion, make sure to cook it absolutely dry so that the water evaporates completely. Otherwise, after baking it will be soggy and affect the taste of the dish.
