Baking a cake is always a satisfying experience for me. Cakes of different types and varieties form an important part of my experiments with baking.

My today’s post is also about a cake, but a different one comprising vegetables and mostly devoid of sugar. This cake can be defined as an easy to prepare, perfect evening snack and a great tiffin box option for kids, which is yummy as well. The absence of sugar and liberal use of vegetables in this recipe make it a healthy snack option!

This recipe entails using vegetables like bell pepper, green peas, corn, carrot and not to forget onion and ginger to add the zing. The ingredients are easily available in our pantry. I prefer to add pizza sauce along with tomato ketchup to further enhance the taste.


  • Eggs- 2 nos
  • Flour- 1 cup
  • Vegetables- ½ cup (finely chopped capsicum, corn, green peas and grated carrot)
  • Onion- 1 small, finely chopped
  • Ginger- ½ tsp grated
  • Black pepper powder- 1 tsp
  • Sugar- 1 tbsp(optional)
  • Tomato ketchup- 2 tbsp
  • Pizza sauce- 1 tbsp
  • Refined oil- ¼ cup + 1 tbsp
  • Curd- 1 tbsp
  • Baking powder- ½ tsp
  • Baking soda- ½ tsp
  • Salt- 1 tsp or to taste
  • Milk- ½ cup.


Sieve flour, salt, baking powder and sugar together.

Separate egg yolk from the white. Beat egg white till soft peak forms.

Add egg yolk and gently fold in.

Add black pepper powder.

Add baking soda in curd. Mix in the egg mixture.

Gently fold in the flour following the cut and fold method.

Add milk and mix lightly.

Add sauces and mix gently.

Grease and line cupcake moulds and pour in the batter.

Bake at 180 degrees C in a preheated oven for approx. 30 min or till done.

Serve warm with hot and sweet sauce.


This is one of the easiest cakes I have ever made! Simple recipe with great result.

If you want to avoid eggs increase the quantity of milk. Though eggs make the texture better. Without eggs, the cakes become slightly dense.

Omit sugar completely if you do not like the sweet taste. I personally prefer that sweet tinge!

Increase the quantity of milk if the batter becomes too thick.

There is no mention of additional flavour in the recipe. The combined flavours of veggies and sauces make it a delightful treat.

Curd plays an important role in the recipe as it helps to activate the baking soda and makes the cake fluffy.

Sometimes we wonder what to serve children as snacks or in between the meals to munch on. This vegetable cake would be a great healthy snack option for children. And this aromatic and flavourful cake will surely make your tea time more interesting!
