Back to blog after a long time. After a gap of almost a year, I am updating my blog. I got busy with something and took a break from blog and social media as well. It’s not that I didn’t cook or click pictures during this sabbatical. I cooked delicacies and clicked pictures as well. Just that I didn’t have enough time to pen down recipes! Other than time, frame of mind is equally important for any creative work. Blogging is not just typing a few words and uploading pictures. It’s a creative and beautiful way to connect with many people. So, one needs to be careful and thoughtful as well to communicate in the right way. I have always tried to put up my best as far as blogging is concerned. Again, the word “best” is misleading and confusing. Because what is best for me may not be the same for others. But that’s perfectly okay as perception differs!
Chicken almond soup is a very nutritious and delicious soup containing the goodness of two rich sources of protein, almonds and chicken. Almonds offer a good source of fat, protein, fibre, vitamins and minerals. But the first time I prepared this soup the health benefits of nuts and chicken were not there in my mind. One fine evening, my younger son, then a kid, wanted to have some soup. Honestly speaking, soup is not something which I prepare regularly. And at that time, I was staying alone with two kids in a place where there was no grocery shop nearby! And, at that time, online delivery was not an option at all. All I could locate in my pantry were some almonds and a few pieces of chicken in my freezer! With those limited resources I literary had to exercise my brain to make some soup and the challenge was to make it delicious and wholesome to satisfy his taste buds!
At that time browsing the net for recipes was not so common and neither did I develop the habit of searching google for anything and everything! So, what to do? When children want to have something, the mother is left with no option but to prepare it! So, I relied on my culinary skill and prepared something I never thought would be so tasty. I prepared it from scratch with no preconceived ideas and with limited resources. Years later when I searched the net for chicken almond soup I found lots of similarities between my recipe and the recipes available there. Curating a recipe is not that difficult a task if one knows the basic technique like matching the ingredients and spices together to get the desired flavour while maintaining the nutritional level.
So, this was the background of my chicken almond soup. Now without engaging you in further narration I would like to pen down the ingredients and method of this amazing soup!
Preparation time- 15 min
Cooking time- 20-25 min.
Difficulty level- Easy
- Chicken, boneless – 150 gm
- Almonds- 8-10 nos, blanched and sliced.
- Almond powder- ¼ cup
- Celery- 3 tablespoon
- Leak- 3 tablespoon
- Milk- 1 cup
- Fresh cream- ¼ cup(optional)
- Onion- 1 medium, chopped.
- Butter- 3 tablespoon
- Water- 4 cups
- Black pepper powder- ½ tsp
- Salt- as per taste
- Cinnamon powder- a little bit
- Corn flour- ½ tbsp
Boil boneless chicken in 4 cups of water. Add a little salt and ¼ tsp of black pepper powder. Boil it for 15 minutes. Blanch almonds and remove the skin. Slice it. Take a non-stick pan and put 1 tbsp of butter. Fry the sliced almonds in butter till it turns light brown. In the same pan, add another 2 tbsp of butter and put the chopped onion and fry on medium heat till it turns translucent. Do not brown the onion. Add the chicken pieces along with the stock. Now put chopped celery and leak and nicely stir the soup. Add ¼ tsp of black pepper powder and salt as per taste. Take ½ cup of milk and add the almond powder and cornflour to it. Mix it nicely and add to the soup. Give it a nice stir and keep cooking on slow flame for another 1-2 min stirring continuously. The cornflour will thicken the soup. Switch off the gas. Now add a pinch of Cinnamon powder and mix it properly. While serving sprinkle some black pepper powder and the roasted almond slices. Enjoy the super delicious and nutritious chicken-almond soup!
Few ingredients and a great outcome. That’s the beauty of this recipe.
As I have mentioned in the beginning that when I made the soup the very first time there were limited resources. Still, the soup turned out to be tasty and nourishing as well. But there are a lot of scopes to further improve the soup by adding a few more ingredients. As I remember as my son is very fond of cheese I added topped it up with some grated cheese for some extra flavour!
The presence of almond flour makes the soup thick. So, if you are satisfied with that consistency simply avoid adding cornflour.
This soup is slightly heavy and wholesome. So, I prefer to serve it with just slices of freshly baked brown bread only.
